Mussels in Curry Sauce 2 Ways

We love curry at home…! Here is a great, easy and healthy way to prepare curry mussels. I used red curry but your favorite curry paste work great. You also can add veggies to the sauce if you are going to make it into a pasta dish. Some of my favorites in this dish are roasted asparagus, Brussel sprouts, onions and zucchini.  Enjoy!!

 

I kg. Mussels, cleaned*
½ red or white onion, sliced
3 garlic cloves, finely chopped
1 chili pepper cut in half
1-2 tablespoons curry paste, depends on how spicy you like it
Fresh mint
Fresh cilantro
1 cup coconut milk
Salt to taste

 

Sauté the onion, garlic and chili pepper in some olive oil. Let it cook slowly until tender and all the flavors blend together.
Then add the curry paste, sauté for a few seconds. Add the mussels and coconut milk. Mix everything together, top with a few springs of mint and cilantro and season with salt to taste.

 

Cover and cook for about 5 minutes until de mussels open completely and are cooked through.

 

At this point you can serve it in a bowl topped with chopped fresh cilantro and mint with a side dish of crispy baguette or Chinese steamed bread.

 

Another option is to toss it with some fresh boiled pasta. For this, I prefer to take all the mussels out of their shells and toss everything together.

 

*To clean mussels:
-Tap any mussels that are partly open to see if they close and discard those that do not close tightly or that are broken
-Rinse each mussel in cold water
-Pull the straggly, hairy ‘beard’ from the mussel
-After cooking, discard any mussel that does not open
