Tequila, Lime and Mint Pops
This is a great recipe that I worked on, to enjoy especially during the summer time after a meal or BBQ with great friends, just remember to make it at least one day ahead
1.5 cups of sugar
1/3 cup of fresh finely chopped mint
1 lime, sliced and finely chopped
1.5 cups lime juice
2.5 cups soda water
1/2 cup water
1 cup tequila
Mix lime juice, soda water, water and tequila
Crush the sugar, chopped lime and mint until creamy. Add to the liquids and mix well
Place in mini shot grasses and freeze for about 1 hour. Then place in the middle of each glass an ice cream stick and keep freezing for 24 hours.
To serve take them out of the shot glasses and stand on top of sugar mixed with tajin (Mexican chili powder with lime and salt)
Serve right away
